Yeasts are single-celled fungi that usually reproduce by budding or fission. Saccharomyces cerevisiae is a key model organism and industrial microorganism used in bread, beer, wine, recombinant protein production, and molecular genetics. Some yeasts are opportunistic pathogens, especially in immunocompromised hosts.
